WHAT THIS IS
What this is, and why it matters
Temperature calibration compares your instrument against a reference at defined set points and reports the deviation and its uncertainty at each. It covers hand-held thermometers and probes, thermocouples and RTDs, and data loggers; and it covers the equipment that holds a temperature rather than reads one — ovens, incubators, water baths, refrigerators, freezers and environmental chambers. Humidity instruments are handled in the same lane. For enclosures, mapping establishes how temperature varies across the working volume rather than only at the built-in sensor.
Temperature is the most heavily relied-upon measurement in food manufacturing and the most casually verified. Cook steps, chill chains, cold storage, laboratory incubation and the validation of a pasteuriser all rest on a reading being right. The detail that matters is calibrating at the point of use: an instrument correct at ambient can be several degrees out at 4 °C or at 121 °C, and the set point worth testing is the one your process runs at, not the one that is convenient to reach on the bench.

When you need it
A temperature is a critical control point
Where HACCP names a temperature as a CCP, the instrument monitoring it has to be calibrated and traceable and the interval has to be justified. This is a standard line of audit questioning, and "we calibrate annually" is not on its own the justification.
Cold chain and cold storage
Chillers, freezers, cold rooms and transport loggers make product safety decisions continuously and unattended. A logger reading two degrees low turns a documented cold chain into a fiction that nobody notices.
Laboratory and process equipment
Incubators, ovens, autoclaves and water baths need calibration and, being enclosures, mapping — a single sensor near the door does not describe the shelf at the back, and it is the shelf at the back that holds the samples.

How it works
Identify the instrument and the range you use
Instrument or enclosure type, and — the important part — the set points your process runs at. Calibration points are chosen around those, and for enclosures the mapping layout is agreed before the visit rather than improvised at it.
Coverage confirmed against the accredited scope
The laboratory confirms whether your instrument and range sit inside the accredited scope before quoting. Where they do not, that is said plainly rather than quietly absorbed — the scope annex is published on this site precisely so the boundary is checkable.
Measured as found, before any adjustment
The as-found reading is recorded first, always. It is the only evidence of whether the measurements you have already taken and acted on were sound, and adjusting the instrument before measuring it destroys that evidence permanently.
Certificate issued against traceable references
The certificate states the deviation and uncertainty at each set point, the reference used and its traceability, and for mapping, the position of each sensor and the variation observed across the volume over the period.

Common questions
Temperature and humidity
Can you calibrate at the temperatures I actually use?
Yes — calibration points are chosen to bracket your working range rather than a generic one, and uncertainty is stated per point. Tell the laboratory the range the instrument lives in, and the points are confirmed in writing before work starts.
Do you calibrate the probe or the whole loop, including the display?
The reading you act on comes through the indicator, so calibrating probe and indicator together — as used — tells you what you actually see. If probes and displays are swapped around in service, say so; that changes what the certificate can cover.
Is this accredited work?
Temperature falls within the laboratory’s SAAC-accredited calibration fields under ISO/IEC 17025:2017, certificate N-C-00592. Whether a specific instrument — a humidity sensor, for example — sits inside the accredited scope is confirmed in writing at quotation and stated on the certificate itself.
My logger was fine at calibration but the process data looks wrong — why?
Calibration tells you about the instrument under controlled conditions; it does not correct a probe placed in the wrong part of the room or a sensor reading air instead of product. If the as-found was in tolerance, look at placement and use before blaming the logger.
What happens if the as-found result is out of tolerance?
It is reported exactly as found, before any adjustment, and that number judges every measurement made since the last calibration. You then decide what to review — which is only possible because the as-found was recorded rather than adjusted away.
